Linzer Shortbread Cookie

This recipe is also available as a Linzer Eye, Linzer Biscuit, Linzer Cookie, or Christmas Cookie. Made from the same Linzerdough shortcrust pastry, these cookies are die-cut, filled with jam, baked, and dusted with powdered sugar. They are a Christmas tradition in many German-speaking countries, notably Austria and Germany. In France, these delicious filled cookies are found in Alsace. Nowadays, the jam can also be replaced by a spread without detracting from its deliciousness.

Jam-filled shortbread

 Ingredients for 20 pieces

  • 100 g caster sugar
  • 100 g soft butter
  • 250 g flour
  • 1 egg
  • 1 sachet of vanilla sugar
  • 50 g almond powder
  • Red fruit jam or spread

Preparation for 20 pieces

Mix the soft butter with the caster sugar and vanilla sugar. Work the mixture until it forms a whitish cream, then add the egg. Mix well, then add the flour and almond powder. Work the dough into a ball. Refrigerate for at least 30 minutes. Using a cookie cutter, cut out the desired shapes. Place them in the oven for 10–15 minutes at temperature 5, 150°, they should be white. Leave to cool, then drizzle jam over the full shortbread.
